    The lavender: the Blue Gold of the Plateau of Provence is always harvested in July. Here is an aerial view of one of the harvesting process in the Plateau of Valensole. - a 3-head harvester collects the lavender, using an arm connected to the tractor and deposits it crushed. Once the tractor is full, water vapor will be injected through pipes located at the bottom of it in the distillery, to extract all its essential oil.
