    February in Burgundy. In the high coasts of Nuits-Saint-Georges Antoine Delaunay paces his vines on the way home from a winter pruning morning. Winemaker of the Côte d'Or, he took over the family vines in 2017 and went organic. Listening to nature, he helps the vine to give it the best while respecting the local ecosystem. I followed Antoine for a year by visiting him on the different highlights of the year. From then I became aware of the immense, daily work that precedes the harvest, the bottling. According to Antoine, the vine does the work that men are trying to highlight in winemaking.
